There are minimal ingredients to this chicken, allowing you to just toss it in a pot and not worry about it until it’s done. It’s great for those days where you don’t feel like cooking.
Ingredients
Bone in chicken thighs (make sure it still has the skin)
1 Tbsp Adobo seasoning
1 (14.5 oz) can petite diced tomatoes
Directions
To a pot, add the chicken skin side down with the adobo seasoning. Brown on both sides. Do not add any oil, the chicken will release it’s own oils. Once the chicken has been cooked through, add the can of diced tomatoes and cook on low for 30 minutes.
Notes
Can use steamed veggies as a side dish or cook some pasta and mix in with some of the sauce.
