Ingredients
1 (14.5 oz) Chicken Broth with less sodium
Tricolor Pearl Couscous (Red Mill brand)
1 Tomato, chopped
1 (15 oz) can Black Beans
1 (15 oz) can Red Kidney Beans
1 (15 oz) can Garbanzos
1 bunch Cilantro
1/2 Onion, chopped
1/2 Cup chopped Artichokes (from the jar)
Directions
1. Boil the couscous with the chicken broth according to directions on the package.
2. In a bowl mix together the rest of the ingredients
3. Once the couscous has cooked and cooled for a few minutes, mix it in with the rest of the ingredients. Serve.
