Traditional Mexican coffee that is typically prepared in a clay pot. It has a very unique taste of of cinnamon and piloncillo that you can't get by simply brewing coffee in a coffee pot. This recipe if for both caffeine addicts and those that casually drink coffee.
Ingredients
1 - 2 Piloncillo
2 Cinnamon Sticks
1 Star Anise
1 Clove
8 Tbsp Coffee (I use Folgers)
8 Cups Water
Directions
In a clay pot, add the piloncillo (1 or 2, depending how sweet you want it), cinnamon sticks, star anise, clove, and water.
Boil until the piloncillo is dissolved
Add in the ground coffee.
Boil for about 15 - 20 minutes.
Strain the coffee and serve. I used the mesh coffee strainer for my coffee pot.
Notes
The type of pot matters
You can use any pot you have available for this recipe. However, boiling the ingredients in a clay pot does play significant role in giving the café a unique flavor of a traditional café de olla that you otherwise wouldn't get with any other pot.
