This is a traditional Mexican dish, consisting of a rolled up & fried corn tortilla, filled with chicken, beef, cheese, or spam. Growing up, my grandparents would always make this dish with spam. As I grew older, I preferred making flautas with chicken and seasoning it to my own liking. There's no doubt that this recipe will come out delicious however you choose to fill your flautas.
Ingredients
For the chicken For the flautas Toppings
1/2 Onion Shredded Chicken Salsa of your choice
2 Cloves of Garlic Tortillas de Maiz Mexican Sour Cream
3 Bay Leaves Garlic Powder Queso Casero
Salt & Pepper to taste Salt Shredded lettuce or cabbage
3 Chicken Breasts Pepper
Vegetable Oil for frying
Toothpick (for closing the flauta)
Instructions
Boil the chicken with the onion, garlic, bay leaves, salt & pepper. When the chicken is ready, it should be falling apart on its own.
Shred the chicken and set mix in the garlic powder, salt, and pepper, to taste.
2. In a small sauce pan, add enough vegetable oil to fry the rolled up flautas or taquitos. Don't turn this on just yet. It's just the set-up.
3. Turn on the comal (griddle). Once hot, begin heating up the tortillas.
4. Fill the tortillas with the shredded chicken and roll them up.
5. Use toothpicks to keep the flautas rolled up.
6. Place the flautas in the oil and fry them until they are golden brown. Careful, the oil splashes and the flautas turn brown quickly.
7. Once they're golden brown, take them out of the oil and place them on a plate with a paper towel to drain off any excess oil. You may remove the toothpicks at this point.
8. Prepare the toppings and add them to the flautas.
9. They are ready to serve.
