Pollo de Tinga

This is a traditional Mexican dish that my Nana used to love to make. It consists of shredded chicken with a spicy habañero tomato sauce. It can be eaten anyway you want. Whether that be on a tostada, with tacos, in a burrito, or just by itself. Its delicious whatever way you choose to eat it.

Ingredients

 

2 Chicken breasts

1/2 Onion, Sliced + 1/4 of it for blending

4 Garlic cloves

2 Tbsp salt

3 Bay leaves

2 Tomatoes

1 can of Habañero

1 Tbsp Conzumel

1/4 C Homemade Chicken Broth


Instructions

 

1. In a blender, put in the tomatoes, 1/4 of the onion, 2 garlic cloves, chicken broth, and some of the habañeros (to taste). I like to add about 2-3 with a spoonful of the habañero juice in as well but that is fully dependent on how spicy you want it.

2. Boil the chicken in a pot with 2 garlic cloves, bay leaves, 2 Tbsp salt, and half the onion.

3. Once it's fully cooked, take out the breasts and shred them. Careful, they will be very hot. 4. Slice up the rest of the onion cook it with some vegetable oil.

5. Add in the sauce and let cook down.

6. Add in the chicken and let it cool to absorb the flavors. Remember that the chicken will release water.

7. Let cook for about 10 minutes on low heat and serve.
