Chilaquiles are a traditional Mexican dish that can be found in pretty much any household. They can be made with either a red sauce or a green sauce that can be homemade or store bought. These are my mom's chilaquiles con salsa roja recipe.
Ingredients
Corn Tortillas
1 can El Pato Hot Tomato Sauce
1 can Diced Tomatoes with Jalapenos
1 onion, diced
5 Garlic Cloves Roasted
1 Bunch cilantro
Cheese of your liking
Directions
Heat up pan vegetable oil to fry the tortillas.
Cut the tortillas into triangles and fry until golden and remove from pan. Place the tortillas in a bowl with a paper towel to drain some of the excess oil.
Heat another pan with vegetable oil and cook sauté the onions for a few minutes.
Blend the can of pato sauce, can of diced tomatoes, cilantro, and the roasted garlic.
Once the onions are cooked, add the sauce and allow to simmer for about 10 minutes.
Add the tortilla chips and cheese. Wait for the cheese to melt and serve.
Note
I like to sprinkle the chilaquiles with queso casero while they're still in the pan to heat the cheese. Can use cotija or mozzarella if you don't like casero. You can also add Chile jalapeno or serrano peppers if it's not spicy enough for you.
