It's that time of year for cozy blankets, warm drinks, and cookies!
Ingredients
3 Cups of All Purpose Flour, sifted
1 1/2 tsp Baking Powder
1 tsp Fine Sea Salt
3 Sticks of Unsalted Butter
1 1/2 Cups Sugar
2 Eggs
1 Tbsp Mexican Vanilla Extract
1 Vanilla Bean
1 Small Handful of French Lavender
Zest of Half a Lemon
Extra Sugar (not measured, its for rolling the dough) with some vanilla pod seeds
Directions
1. Preheat the oven to 375 degrees.
2. In a large bowl, mix together the sifted flour, salt, and baking powder.
3. Using an electric mixer to cream the butter with a small hand full of lavender and lemon zest. Mix for about 3 minutes.
4. Slice the vanilla pod in half, lengthwise, and scrape out the seeds.
5. Add the sugar and vanilla bean mixture to the creamed butter mix until light and fluffy.
6. Once it's light and fluffy, add in the eggs and vanilla extract.
7. Turn the mixer to low and slowly add in the dry ingredients.
8. Scrape down and mix for about 30 seconds.
8. In a small bowl, mix a little bit of extra sugar and some vanilla pod seeds.
9. Scoop the dough out and roll into 1 inch balls.
10. Place the balls of dough into the small bowl containing the sugar and vanilla mixture and coat them.
11. Press down each ball of dough until they are 1/2 inch thick.
12. Bake for 11 minutes or until the edges are golden.
13. Allow to cool
