One of the easiest and most delicious side dished you'll ever make. Tortas de papa are a traditional Mexican staple that many grow up eating. Served with an oregano tomato sauce and topped with an oregano leaf for decoration.
Ingredients
2 Yukon gold potatoes
3 Eggs
A pinch of salt
Casero cheese
Instructions
1. Boil the potatoes
2. In a small bowl, whip the egg whites until they are light in fluffy. Add in the yolks and whip some more.
3. Once the potatoes are cooked through, mash them.
4. Add in the whipped eggs and cheese.
5. Form the patties with your hands and fry them until both sides are golden brown.
6. Top with tomato sauce and serve.
Note:
I didn't stuff my patties with cheese this time but when I do, I use Monterrey jack cheese. I love stuffing them with cheese but they do tend to get messy when the cheese leaks out.
